Home-made Rafaello with coconut shreds

  • 4 eggs
  • 8 teaspoons of sugar
  • 2 teaspoons of flour
  • 1 teaspoon of baking powder
  • 1 pack of jelly (preferably lemon)
  • 500 ml of cream (36%)
  • 2 bars of white chocolate
  • 3 packs of Śnieżka (whipped cream)
  • 200 grams of Stefik coconut shreds
  • A glass of water


Whisk sugar and yolks with vinegar and baking powder. Whisk the egg whites to solid texture and slowly add the whisked sugar with the ingredients. At the end, add flour and pour the whole into a baking tin lined with baking paper.

Bake the crust for 35 minutes at 180 degrees and then cool off.

 Heat the cream in a saucepan and add chocolate. Heat until the chocolate melts and then cool off.

Empty out the jelly into a glass and add hot water. Wait for the jelly to cool off.

Add Śnieżka whipped cream to the chocolate mass and mix for 10 minutes at fast speed. Gradually add a teaspoonful of cooled jelly while mixing.

Then add 150 grams of coconut shreds, mix, and then place the whole mass on the cooled crust. Sprinkle the top with the remaining coconut shreds.

Put it in the fridge for a minimum of 2 hours and then enjoy the flavour of the home-made Rafaello.
