Classic Vienna cheesecake with raisins and chocolate topping

- 1 kg of cottage cheese
- A glass of sugar
- 4 eggs
- A handful of breadcrumbs
- 100 gram of baking block
- 150 grams of Stefik raisins
- 1 packet of baking powder
- 1 pack of cream pudding
- 2 tablespoons of milk
- 4 tablespoons of sugar
- 2 tablespoons of cocoa
- 1 egg white
Separate egg whites from yolks.
Mix the cottage cheese, sugar and yolks.
Melt the baking block on low heat and then add to the paste while stirring.
Whisk the whites to solid texture a pinch of salt and add to the cheese paste.
Mix the Sultanas with the cream pudding and baking powder, then add to the paste and mix.
Spread the baking block on a baking tin and sprinkle with breadcrumbs. Put the paste in the baking tin, smooth and put in the oven for an hour in 190 degrees. When the time is up, it’s worth doing the toothpick baking test.
In the meantime, mix milk, sugar and cocoa in a saucepan. Take off the fire and add egg white while stirring vigorously. Pour the chocolate topping over the cooled cake and wait until it thickens.
